The Ellinwood Hospital Foundation hosted both the Ellinwood Chamber of Commerce and the Great Bend Chamber of Commerce and Economic Development for a joint Chamber Coffee on Thursday, November 16.
The event was a celebration of Ellinwood Hospital and Clinic's 65th Anniversary and National Rural Health Day.
The Foundation also had an auction "preview" where they showed types of auction items available for the upcoming Christmas Gala, on Sunday, December 3, at 5:30pm. The Gala offers is a dinner and auction fundraiser.

Also, a special request was made that we share our recipe for the Biscuit and Gravy Casserole that our Dietary Manager, Karen, made for the coffee, so here it is:
Biscuits and Gravy Casserole
1 (10 oz) can Pillsbury Grands biscuits cut in pieces
1 lb. bulk sausage
1 1/2 cup shredded Cheddar Cheese divided.
1/2 cup milk
salt and pepper to taste
1 package of pepper gravy ( makes 2 cups gravy)
Preheat oven to 350 degrees. Grease a 9 X 13 baking dish.
Line the bottom of the dish with biscuits.
Cook sausage in skillet and drain grease. Scatter sausage over biscuit layer and top with 1 cup of cheese.
Whisk eggs, milk, salt and pepper pour over cheese layer.
Prepare gravy according to directions on package. Pour gravy over egg layer. Sprinkle remaining 1/2 cup cheese over casserole.
Bake until egg is fluffy and cheese is bubbling, about 30 minutes.
